JACKIE FOOKES

Owner, Red Seal Chef

A founding chef of Merry Folks Catering, Jackie's devotion to cooking and urban homesteading inspired her to start a female-led catering venture. She draws industry know-how and formal training to offer creative dining experiences.


Jackie loves gardening and is devoted to eating off her land. (It is not for the faint of heart!). She also loves reading (definite bookworm). If she isn't into a book or harvesting something from her garden, she's probably thrifting.


She graduated from NAIT's Culinary Arts Diploma program in 2018, going on to train in such notable kitchens as Ernest's at NAIT and Riverbank Bistro (St. Albert).


She received her Red Seal Designation in 2021. After a lengthy and rewarding experience with the Ernest's service team (Edmonton), she trained at Riverbank Bistro (St. Albert), becoming the Sous Chef in 2022. 


Jackie's consistency is like no other. She is driven and is willing to prove herself with her drive for perfection.

ALYCE O'NEILL

Red Seal Chef, Awesome Mom

As a founding chef of Merry Folks, Alyce brings her boundless creativity and passion for cooking.

From humble beginnings at Montanas, Alyce continues to evolve into a remarkable chef.


She graduated from NAIT's Culinary Arts Diploma program in 2017, and trained in such notable kitchens as Ampersand 27, Meat, Town Square Brewing, Tryst and Riverbank Bistro.

Alyce received her Red Seal designation in 2018.


She was recruited in 2019 to build the menu as head Chef of Town Square Brewing (Edmonton). Continuing to grow, she became the Sous Chef at Tryst (St. Albert) and then the Chef de Partie at Riverbank Bistro (St. Albert).


In 2019, she was featured in Edify's New and Notable for her work with Town Square Brewing.


Alyce has a knack for pushing boundaries (and buttons) in the pursuit of culinary excellence, not often settling for things as they are. Her passion for creating the best inspired her to found Breaking Bread, specialising in gluten-free sourdough. More gluten-free treats to come!
